Huevos Rancheros Recipe

This is one of my favorite breakfast. I think it's the King of Brekkies. You won't be hungry for a while with this!

Ingredients

  • 2 eggs
  • 2 tortillas
  • 1 cup of soaked beans (Pinto is my favorite, soaked overnight - You could use pre-cooked beans in a tin)
  • 1 tablespoon of butter
  • 1 avocado
  • Juice from 1 lime
  • 1 tablespoon of vinegar
  • Salt
  • 1 Tomato, diced
  • 1 small onion, diced
  • 1 small chili such as Bird's eye chili, diced
  • 2 slices of cheese
  • 2 tablespoons of chopped coriander

Method

Starter
  • Boil the beans in water for ~45 minutes (until tender)
  • Start the oven at 350F/150C
  • Boil some salty water with the vinegar (This will be used to poach the eggs)

Refried beans
  • Remove the water from the beans, add a pinch of salt and butter
  • Mash the beans with a potato masher
  • You could add a bit more butter or water from the beans, you are looking for a mashed potatoes consistency

Guacamole
  • Cut and dice the inside of the avocado, discard the pit
  • In a bowl, add the avocado(you can use a spoon or fork to scoop) and lime juice
  • With a fork, mash the avocado and mix well with the lime

Salsa
  • Mix together the tomato, onion, chili and 1/4 of the lime juice

Assembly
  • Put the tortillas in the oven, when the corners are rolling up or are becoming crispy, they are ready to use
  • Spread the refried beans on the tortillas
  • Spread the Guacamole on the tortillas
  • Spread the salsa on the tortillas
  • Poach both eggs for 3 minutes in the boiling water with vinegar
  • When cooked, take out of the water and put on top of the tortillas
  • Add a slice of cheese and bake for 3-5 minutes or until the cheese is melted
  • Pour the remaining lime juice
  • Sprinkle some chopped coriander
